Lemon Chicken

Ingredients

1/4 cup unsifted flour
1 teaspoon salt
1/3 teaspoon pepper
6 skinless, boneless chicken breasts
1/4 cup margarine
1/4 cup lemon juice
8 ounces sliced mushrooms (optional)


Directions

In a plastic or paper bag, combine flour, salt and pepper. Add chicken a few pieces at a time, shake to coat. In a large skillet, brown chicken in margarine on both sides until golden brown. Add lemon juice and mushrooms. Reduce heat; cover and simmer 20 minutes or until tender. Serve with rice.
