Katie's Minestrone Soup
Author: Katie Robinson, Harris Elementary, "5 A Day" contest
Ingredients
2 stalks celery, chopped
3 medium potatoes, peeled and diced
2 carrots, peeled and diced
1 bay leaf
1 clove garlic, minced
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/2 teaspoon oregano
1 large can kidney beans
1 can green beans, drained
1 large can tomato juice
3 cups water
Directions
Place all ingredients in a large saucepan and bring to a boil. Let boil for 5 minutes. Reduce heat to low and simmer for 20 minutes until vegetables are tender. This is good served with homemade bread.
