Twice-Fried Ranch Fries

Ingredients

5 extra-large baking potatoes
4-5 cups of vegetable oil
1 packet of Hidden Valley Ranch Seasoning Mix (reserve)
1 cup light mayonnaise
1 large peach (peeled and mashed)
1/2 cup chopped red onion
1/2 cup chopped Anaheim pepper
3 teaspoons honey
1/2 teaspoon curry powder


Directions

Peel and slice each potato into 8 wedges. Soak fries in cold water for approximately 2 hours to remove starch. Drain water off fries and pat dry. Heat oil in a deep cooking pot. When oil is hot enough for frying, carefully place a handful of potatoes in pot. Let cook through but not browned. Remove fries from oil and repeat until all fries are cooked. Turn oil to off. When ready to serve, heat oil again and fry until light brown and crisp. Place fries in a large paper sack with dry seasoning mix and shake until covered.

Mix together mayonnaise, peach, red onion, pepper, honey and curry powder. Serve with the fries.
