Grilled Vegetables

Ingredients

Squash
Zucchini
Eggplant
Onions
Sweet peppers
Tomatoes
Jalapenos
Asparagus, blanched


Directions

Cut the vegetables into slices or wedges. Marinate for 2 hours in olive oil mixed with a little salt, pepper, fresh minced garlic, oregano or thyme. Pre-heat grill, and cook on hottest part of the grill for 4-5 minutes per side, or until fork-tender.
