Cheesy Ranch Potato Bake

Ingredients

2 1/2 pounds southern style hash browns
2 cans cream of chicken soup
3/4 cup sour cream
1 envelope Hidden Valley Ranch Dressing mix
3/4 cup shredded mozzarella cheese
1 cup shredded Colby-jack cheese (reserve 1/2 cup for topping)
1/2 cup melted butter (reserve 1/4 cup for topping)
1/2 teaspoon each salt and pepper
2 tablespoons dried onions
1 cup crushed crackers


Directions

In a large bowl, mix all ingredients except reserved Colby-jack cheese, butter and crushed crackers. Spread into a greased 9-by-13-inch casserole dish.

Sprinkle reserved cheese on top of potato mixture.

Mix reserved butter and crushed crackers in a separate bowl and sprinkle over top. Bake, uncovered, at 375 degrees for 30-35 minutes or until golden brown. Makes 10 servings.
