Double Apple Bars
Ingredients
3/4 cup packed brown sugar
3/4 cup applesauce
1/4 cup vegetable oil
1 egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chopped unpeeled all-purpose apple
Powdered sugar, if desired
Directions
Heat oven to 350 degrees. Mix brown sugar, applesauce, oil and egg in large bowl. Stir in flour, baking soda, cinnamon and salt. Stir in apple.
Spread batter in ungreased square 9-by-9-by-2-inch pan. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean; cool. Sprinkle with powdered sugar. Cut into 6 rows by 4 rows. Makes 2 dozen.
Each cookie contains 85 calories, 3 g fat, 10 mg cholesterol, 55 mg carbohydrate, 13 g fiber, 1 g protein.
