Peach Cobbler

Ingredients

1 No. 10 can peaches
2 tablespoons cinnamon
1 tablespoon nutmeg
1 pound brown sugar
1 cube margarine
9 eggs
3 packages white or yellow cake mix
1 cup oil


Directions

Make sure 16-inch Dutch oven is cleaned and well oiled. Start charcoal about 20 to 30 minutes before cooking time.

Dump peaches, brown sugar and spices into the Dutch oven. Layer butter on top of the peach mixture.

Mix cake mixes according to package (always use two of one kind and one of the other; this makes them special to Staheli Catering). It is better to have the cake mixes prepared earlier, then add to the peach mixture.

To bake, place the pan on top of 14 pieces of charcoal. Add another 14 pieces of charcoal on top of the lid. (You need to keep an eye on these as when they cook they are very moody.)

Cooking time should be about 45 minutes. Makes 40 servings. Serve hot.
