Bambara Biscuits

Ingredients
2 cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
4 teaspoons baking powder
1/3 cup shortening
1 1/4 cups buttermilk
Directions
Sift dry ingredients into mixing bowl. Cut in shortening. Pour buttermilk in all at once (add more milk if too dry, more flour if too wet). Work dough, folding together gently. Pat or roll out to 1/2 inch thick. Cut with a 3-inch diameter cutter dipped (every time) into flour. Place onto parchment-lined sheet pan. Brush biscuits with milk.
Cook at 500 degrees for 7 to 10 minutes (conventional oven).
Cook at 425 degrees for 7 to 10 minutes (convection oven).
