Tomato Bruschetta

Ingredients
Prep time: 20 minutes. Serves: 6 to 8.
8 medium-size tomatoes, diced and seeded (Cherokee Purple and Brandywine are good to use)
3 to 5 cloves of garlic
1/4 cup olive oil
1/4 cup balsamic vinegar
salt and pepper to taste
1/2 to 3/4 cup coarsely chopped basil
1 loaf crusty Italian bread, grilled
Directions
Combine all ingredients and season to taste. Serve on crusty Italian bread. The mix also is good with diced fresh mozzarella or crumbled feta cheese.
