Red Iguana at City Creek

Here's an encouraging sign that Salt Lake City's downtown project really is rising: Taste of Red Iguana opens March 2 at 10 a.m. in the City Creek Center's food court.
I'll bet a lot of folks were unaware that a food court still exist somewhere in that mass of construction. So let's hurry over, before word gets out. After that, there will likely be long lines spilling out around the block, as with the restaurant's two West side locations. But because this is a quick-serve concept, the lines are likely to move a lot more quickly.
"We will be serving an abbreviated menu of Red Iguana's favorites, and a few added ideas that seem ideal for quick lunches and take-home or back-to-office take out," said Bill Coker. He and his wife, Lucy Cardenas, are part of the Cardenas family that's been serving award-winning Mexican food here in Utah since 1965.
Taste of Red Iguana will be joining tenants Great Steak, McDonald's, Sbarro, Chang Chun and Suki Hana. Slated to open in the future are Bocata, an artisan sandwich concept from the owners of Settobello Pizzeria Napoletana; Roxberry, a smoothie and yogurt bar; and Subway.
