Stuck with mountains of Thanksgiving leftovers? Liven up that classic turkey sandwich with this simple recipe. It's easy to fix with just the leftovers from your Thanksgiving meal, and it will even compliment that homemade turkey noodle soup. For a bit more oomph, turn this sandwich into a turkey salad wrap with some fresh spinach leaves. If you are even more daring, use homemade honey wheat bread over store-bought bread and homemade cranberry sauce.
Turkey Salad Sandwich with Cranberry Sauce
4 cups cubed turkey
1/2 cup chopped celery
1 cup chopped bacon
1/4 cup chopped onion
1 teaspoon fresh rosemary
1 tablespoon mustard
1 cup mayonnaise/salad dressing or ranch salad dressing
Poultry seasoning, salt and pepper to taste
Sliced Swiss cheese
Chop and cook bacon until crisp. Mix with turkey, celery, chopped onions, rosemary, mayonnaise/salad dressing, mustard, poultry seasoning, salt and pepper to make the salad. Toast bread, then spread cranberry sauce on both slices of bread. Add turkey salad with a slice of Swiss cheese. Grill sandwich until Swiss cheese is melted. Serve with homemade turkey noodle soup or a side of leftover stuffing.
For a turkey salad wrap, follow recipe above, substituting toasted bread with your favorite tortilla like flour or spinach, or use pita bread. Add fresh spinach. You can even turn this recipe into an appetizer for the next night by using toasted baguette bread. Spread the cranberry sauce, then drop a spoonful of turkey salad onto the toasted baguette.
