If you have wheat in long-term food storage and a mill to grind it, you've made a good start. (See Storing wheat: It's not a big deal!) What will you do with whole wheat flour in an emergency? Add water for wallpaper paste? A simple list of additional supplies will allow you to bake delicious and comforting baked foods like we're used to eating — i.e., bread, pancakes, muffins and desserts — in a time without the usual access to a grocery store or funds to spend.
Consider storing oil if you plan to make bread. Some oil in your diet is necessary for good health, some vitamins being entirely fat-soluble. It's simple to figure how much oil you need by considering how much bread you would eat. Most people don't realize that to bake bread for a loaf a day for a family, you will use about four gallons of oil in a year. For a half a loaf a day, store two gallons of oil. Store a small amount of additional oil for other cooking, if desired.
