Granulated or white sugar: Highly refined cane or beet sugar.
Superfine sugar: More finely granulated (also known in Britain as castor sugar).
Powdered sugar: Sugar granules that have been crushed into a fine powder. To prevent clumping, a small amount (about 3 percent) of cornstarch is added. Also known as confectioner's or icing sugar.
Brown sugar: Unrefined sugar, or sugar that has been combined with molasses. The darker the sugar, the more molasses it contains.
Raw sugar: What's left after sugar cane has been processed to remove the molasses and refine the sugar crystals.
Turbinado sugar: Raw sugar that has been steam-cleaned.
Decorating or coarse sugar: Granules are about four times larger than those of regular granulated sugar.
Colored sugar: Tinted granulated sugar.
Molasses: A by-product of the processing of sugar cane or sugar beets into sugar.
Rock sugar: Large crystals made from cane sugar.
