Recipe of the week: The Roof Zucchini Salad

The Roof Zucchini Salad

Makes 10 servings

Ingredients:

1/2 cup soy bean salad oil

2.5 lbs zucchini (~4 small zucchinis)

2 large red tomatoes

1/4 oz. minced garlic

1/4 cup small diced red onion

1 julienned green pepper

1.5 oz. (1/2 bunch) fresh parsley

3 teaspoons white wine vinegar

Kosher Salt and black pepper

In a small bowl, combine the oil, minced garlic, fresh parsley (finely chopped), white wine vinegar, and salt and pepper to make a dressing. Combine the zucchinis, tomatoes, red onions, green peppers and parsley. Add the dressing to the salad, combining slowly until lightly coating all the vegetables. Add more salt and pepper as necessary.
