FANCY SHRIMP PASTA WITH ROASTED RED PEPPER
Start to finish: 20 minutes
8 ounces penne pasta
2 teaspoons butter
1 teaspoon olive oil
1 large onion (for about 1 cup chopped)
1 pound shrimp, peeled and deveined
1 (8 ounce) package already-sliced mushrooms
1/2 cup frozen green peas
11/2 cups half-and-half
1 roasted red pepper (for about 1/2 cup diced)
2 teaspoons seafood seasoning (such as Old Bay)
Shredded Parmesan cheese, optional garnish
Fresh Italian (flat leaf) parsley, chopped, optional garnish
Place the pasta in 21/2 quarts of already-boiling water. Cook the pasta for 9 to 11 minutes, or according to package directions. Drain well.
