Connecticut-based chain to open eatery at Provo mall

A Sandella's Flatbread Cafe — which sells wraps, paninis, quesadillas and pizzas made using flatbread — will open in the Provo Towne Center in December, the Connecticut-based chain's first entry into Utah.

Justin Ames is opening the franchise with the hope of luring a strong customer base from Christmas shoppers at the mall. He plans to open two other Sandella's cafes in Sugar House and downtown Salt Lake City in the next two years.

Ames has worked for 10 years in catering and concessions industries and five years in supply-chain management. He was attracted to Sandella's because he said its food selections are healthy. He also liked the fast, casual environment of the cafes, which he called "quick and cool." He believes the future of dining will be restaurants that offer fast and healthy food.

"I've partnered with various family members on this venture," Ames said. "We enjoy working together as a family, and this latest business will keep that tradition."

Sandella's is based in West Redding, Conn. Mike Stimola founded the company in 1994. He came up with the name "Sandella" by combining the names of his wife, Sandy, and his mother, Ella Jane.

The company has about 130 cafes nationwide, and about 350 other locations are in development. The company boasts that its flatbread is baked in a traditional brick oven and contains all-natural flavors and no artificial flavors or colors.
