Cheesecake
Ingredients:
1 bricks of cream cheese (room temperature)
1 cup granulated sugar
cup sour cream
6 eggs
1 teaspoon vanilla
teaspoon salt
1 tablespoon orange zest (optional)
1 pint heavy cream
1 can of your favorite fruit sauce
Blend cream cheese and sugar in a 5 quart mixer with a paddle attachment. Scrape down the sides of the bowl several times during mixing. Add sour cream, eggs, and remaining ingredients and blend until smooth.
Graham Cracker Crust:
1 cup graham cracker crumbs
3-4 tablespoons melted butter
1 tablespoon sugar
Blend ingredients using a hand whisk. Press mixture evenly into the bottom of a spring form pan. Pour cream cheese mixture over the crust and bake at 350 degrees for 1 hour. It is important to place another baking dish with an inch of water in it on the rack below the cheesecake during baking to create a moist baking environment.
Garnish the edges with dallops of heavy cream that has been whipped to soft peaks and lightly sweetened with one tablespoon granulated sugar and pour the canned fruit sauce over the center. Enjoy!!
