We've come up with 11 great appetizers that will see you through the holiday season. Some are familiar classics, some are restaurant favorites and some are caterers' most-ordered items. Some are quick and easy; others are more labor-intensive, so you can choose according to your schedule.
1. Blue Cheese Potato Chips: These ooey, gooey chips have developed a cult following at Bambara Restaurant.
Instructions: Chef Nathan Powers said they're simply thinly sliced russet potatoes, fried at 325 degrees until crisp, golden brown. Season them with kosher salt, and pile them high on a thick, oven-proof ceramic dinner plate. Sprinkle them liberally with a mixture of half buttermilk blue cheese, half Monterey Jack and bake at 400 degrees for 3-4 minutes until cheese is gooey. Keep an eye on the oven; these can overcook quickly. Garnish with chopped chives and serve while hot on the same plate.

2. Vegetarian Spring Rolls: It's always good to include vegetarian and low-fat options on the buffet. These are crunchy and colorful and can be made ahead of time.
VEGETARIAN SPRING ROLLS
1/2 cup bean sprouts
1/3 head of green cabbage, chopped
5 green onions, chopped
1 cup thin noodles, precooked (vermicelli or cellophane noodles)
1/4 cup fresh herbs (use cilantro, basil or mint — your choice)
1/4 cup carrots, grated or julienned
1 tablespoon lime juice
1 tablespoon soy sauce
1/2 teaspoon fresh ginger, grated (optional)
12 spring roll wrappers
Toss together all ingredients — except wrappers — in a large bowl. Submerge wrappers in hot water until pliable, about 15 seconds. Place about 2 tablespoons of mix on wrapper, and roll. Makes 12.

3. Bacon-Wrapped Shrimp: They're a popular appetizer at the J&G Grill in Park City, owned by chef Jean-Georges Vongerichten. The J&G Grill serves them with a passion fruit and mustard sauce; but just about any sweet-and-tangy sauce is great. They're also wonderful without any sauce at all.
