The first of 15 planned El Pollo Loco restaurants in Utah is expected to open in May.
The first restaurant is planned for Lehi, at 88 N. State, near the Meadows Shopping Center. The WKS Restaurant Corp. is developing the Utah restaurants. Other restaurants are planned for Washington and St. George.
The restaurant chain, based in Costa Mesa, Calif., specializes in grilled chicken marinated in herbs, spices and citrus juices, served in individual or family meals with Mexican-inspired sides. There are 389 El Pollo Loco restaurants in nine states.
