Empanadas are delicious

I enjoyed your article about The Empanada Co. (May 31), which opened last week in Lindon. One of the co-founder's sons works at our company as a summer intern. He recently brought in and baked a box of 50 empanadas for our office staff to taste-test for lunch. They were absolutely delicious! I had the chicken and beef empanadas and had to control myself and stop at three. Some of our less disciplined staff had four or more.
