Rumbi Island Grill, which operates tropical casual dining establishments, announced that it has opened three new restaurants in Arizona and Colorado, bringing its total to 13, and has signed a lease to open a new restaurant in Sandy.
The Sandy restaurant will be in the South Towne Center at 10300 S. State. It will be the ninth Rumbi Island Grill in Utah and is expected to open in October.
Before the end of the year, additional restaurants are expected to open in Colorado and Arizona, as well as in Bountiful, Sugar House, Lehi and Ogden in Utah.
"This year we will more than double the number of stores we had in operation at the end of 2005," said Dave Duffin, company founder and CEO, in a prepared statement. "Our strategy is to build a strong regional footprint first and then introduce Rumbi to the rest of the nation, region by region."
