Breaking new ground

Favorites from the '60s and '70s get a makeover

Blend cottage cheese, cream cheese and sour cream. Spread half the noodles in a large, greased casserole pan. Top with the cheese mixture, the remaining noodles and then the meat mixture. Bake at 350 degrees for 30-35 minutes or until bubbly. Serves 8-10.

LABAMBA CASSEROLE

"This recipe shared by a friend is a flavorful and comforting favorite at our house!" writes Holy Weston of Ogden. "Just preparing it makes my mouth water!"

1 4-ounce can whole green chiles

1 pound 91-93 percent lean ground beef

1 cup chopped onion

2 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon salt

2 garlic cloves, minced

1 14.5-ounce can diced tomatoes with green chiles

2 cups corn

1 16-ounce can fat-free refried beans

1 cup low-fat shredded cheese

1/2 cup chopped green onions

1 cup diced fresh tomatoes

Preheat oven to 375 degrees. Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square pan coated with cooking spray. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add ground beef, onion, chili powder, cumin, salt and garlic.

Saute 5 minutes, stirring to crumble. Add diced tomatoes, cook 5 minutes or until liquid evaporates. Spoon beef mixture over chilies. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375 for 30 minutes. Let stand 5 minutes. Top with chopped green onions and diced tomatoes. Yield: 6 servings — Holly Weston, Ogden

BARBECUE BEEF

2 pounds ground beef

1 envelope dry onion soup mix

1/2 teaspoon salt

1/2 teaspoon pepper

1 1/2 cups ketchup

2 tablespoons brown sugar

10-12 hamburger buns

Brown ground beef in a frying pan until it's no longer pink. Drain if necessary. Stir in remaining ingredients. Simmer over low heat for 20-30 minutes. Serve hot on hamburger buns. Serves 6-8. — "101 Things to Do With Ground Beef," by Stephanie Ashcraft and Janet Eyring

LASAGNA ROLL-UPS

1/2 pound ground beef

1 small onion, chopped

1 teaspoon garlic salt

1 28-ounce jar chunky spaghetti sauce, divided

2 cups Italian-blend grated cheese, divided

8 lasagna noodles, cooked and drained
