Utahn's new 'Peach 101' cookbook shows the golden, velvety fresh fruit can be used for far more than cobblers

1/2 teaspoon salt

3 teaspoons baking powder

1 cup milk

Whipped cream, sweetened

Fresh ripe peaches, sliced and peeled

Preheat oven to 350 degrees. Cream shortening, sugar and eggs. Stir in vanilla. Sift flour, salt and baking powder together. Alternately add dry ingredients and milk to shortening mixture. Batter will be thick. Pour into two 9-inch round greased layer pans. Bake at 350 degrees for about 30 minutes. When cooled, fill and top with sweetened whipped cream. GRILLED SHRIMP AND PEACHES

1 cup brown sugar

1/4 cup peach juice

1/4 cup butter

1/3 cup almond milk

1/3 cup honey

1 fresh ripe peach, sliced and peeled

1 ripe banana

1 cup shredded coconut

3-4 pounds shrimp

2-3 large fresh ripe peaches, sliced and peeled

In small saucepan, combine brown sugar, peach juice and butter. Stir over medium heat until butter is melted and brown sugar is dissolved. Remove from heat. In a blender, combine almond milk, honey, peach and banana. Blend until smooth.

In large bowl, combine brown sugar mixture and mixture from blender. Stir until well-blended. Fold in coconut. Add shrimp and remaining peach slices and coat well.

Place a sheet of foil over the grill and brush with melted butter to prevent sticking. Pour the shrimp/peach mixture on the grill and cook over medium-low heat. Lightly move the ingredients around with a spatula to prevent burning. QUICK PEACHES & GOLDEN RAISINS COBBLER

Rachael Ray's recipe calls for frozen peaches so she can enjoy cobbler any season of the year.

5 to 6 cups frozen sliced peaches

1 8-ounce package complete biscuit mix (such as Jiffy brand)

1/2 cup water

1/2 cup plus 2 tablespoons granulated sugar

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon allspice

1/8 teaspoon black pepper

Pinch salt

1 1-ounce box golden raisins, about 1/3 cup

1 2-ounce package sliced almonds, about 1/4 cup

Ice cream or whipped cream for serving (optional)

Preheat oven to 425 degrees. Place the frozen peaches in an 8-by-8-inch glass baking dish and defrost in the microwave on high for about 3 minutes.
