Here are some ideas to use up your Thanksgiving leftovers

To toast the walnuts, preheat oven to 350 degrees. Spread walnuts on a baking sheet or in a shallow pan. Bake, stirring once or twice, until lightly browned and fragrant, 7 to 10 minutes. Set aside.

In a small bowl combine the turkey or chicken stock, 3 tablespoons soy sauce, sesame oil, sugar and 1 teaspoon cornstarch. Set aside.

Heat a wok or large saute pan over medium heat. When hot, add 1 tablespoon cooking oil; swirl to coat sides. Add ginger and garlic; cook and stir 10 seconds. Add onion and bell peppers and cook 2 minutes. Add snow peas and cook 1 minute. Add turkey mixture and cook 1 to 2 minutes until heated; stir in stock mixture. Bring to boil; cover and cook 2 minutes or until vegetables are tender-crisp. Stir in toasted walnuts and serve immediately. Serves 4. — Diamond of California.


QUIRKY TURKEY WRAPS

1/4 cup ranch dressing

1 teaspoon curry powder

About 2 cups sliced or chopped cooked turkey

6 iceberg lettuce leaves

1/4 cup jarred bacon bits

1/2 to 1 cup sharp cheddar cheese

Mix ranch dressing, curry powder and turkey. Place about 1/3 cup of turkey in center of each leaf and sprinkle with bacon bits and cheese. Roll up the lettuce leaf. Repeat with each lettuce leaf. Makes 6 wraps. — Valerie Phillips


TURKEY NACHO CASSEROLE

1 can cream of chicken soup (can be reduced-fat)

2 cups sour cream (can be reduced-fat)

2 tablespoons taco seasoning or chili spice blend

1 teaspoon dried onion flakes

2 cans chopped green chiles

2 to 3 cups chopped cooked turkey

About 3 cups Baked Doritos or Tostitos chips

1/2 cup shredded cheddar cheese

1 tablespoon chopped cilantro, optional

Mix soup with sour cream, seasoning, onion and chiles in a glass casserole dish. Fold in turkey and chips until well mixed. Sprinkle with cheese and cilantro. Microwave, covered, on high about 8-10 minutes or until casserole is heated through and the cheese is bubbly. Makes about 6 servings. — Valerie Phillips


HEARTY TURKEY DIVAN BAKE

6 ounces uncooked dried spaghetti, broken into thirds

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup chicken broth

8 ounces (2 cups) medium or sharp cheddar cheese, shredded

1/2 cup milk

3 to 4 drops hot pepper sauce

2 cups cubed cooked turkey or chicken

2 cups frozen cut broccoli

1 (4-ounce) can sliced mushrooms

Heat oven to 350 degrees. Cook spaghetti according to package directions. Drain and set aside.
